It wasn’t often that black was more satisfying than gold. That it took deliberate effort and careful technique to convert the already exquisite into the truly exceptional. But that was the case with the kala jamun – the deep near-black belied the caramelised goodness of the dessert, the refreshing burst of syrup it yielded with every bite.
